Thai-Style Radish and Watermelon Salad - Inspired by Chef Liza Connoly

Ingredients:
¼ cup plus 2 Tbs fresh squeezed lime juice
1 T Asian fish sauce or Soy Sauce
1 T sambal celek or chili sauce
2 tsp finely grated ginger
Salt and pepper
1 5-lb watermelon, rind and seeds removed,cut into 1 ½ inch chunks
12 radishes, thinly sliced
8 scallions, thinly sliced
¾ cup mint leaves, coarsely chopped
¾ cup Thai basil leaves, torn
Optional; pinch of dried Thai hot chili or 2 fresh ones thinly sliced
Directions:
In a large bowl, whisk the lime juice, fish (or soy) sauce, chili sauce and ginger.
Season with salt and pepper.
Add the watermelon, radishes, scallions and chilies and toss together.
Fold in the mint and basil, taste and season accordingly.
Serve this right away!
