Strawberry Soda with Mint
Makes 1 ½ cups / aprox. 6 drinks
What you’ll need:
The syrup:
2 ½ cup fresh strawberries
½ cup sugar
6-10 mint leaves (& more for garnish)
The soda:
Ice
1 cup seltzer water
Add ¼ cup of the syrup
Directions:
1. Make the syrup: Clean strawberries and
Place in a medium saucepan with the
sugar and stir well for about 5 minutes
until berries release their juices.
2. Add ¼ cup water & mint to the saucepan &
boil on medium heat until the berries have
softened and fallen apart, about 15 minutes.
3. Remove pot from the heat and let it cool for 5
or so minutes. Strain syrup through a fine mesh
sieve into a glass jar with a tight fitting lid. The
syrup will keep for at least a week. Reserve the
pulp to use later if you would like (like muffins,
jam or to top your yoghurt or ice cream).
4. Fill a tall glass with ice and pour in seltzer water
and add your syrup and stir. Garnish with mint
leaves.
** To make a Strawberry Mint Julep: For 2 cocktails, muddle 15 mint leaves and divide between 2 glasses w/ 1 cup of ice each. Top each glass w/ 1-2 ounces syrup & 2 ounces bourbon. Add selter if desired.
