Honey Mustard Chicken with Mushrooms and Arugula

Ingredients
2 T olive oil
2 medium sized onion, chopped
4 chicken breasts from Copicut Farms
3 cloves garlic, minced
1 quart mushrooms, shitake, oyster or lions mane, chopped
1 cup feta cheese, crumbled
3 cups arugula
3 T dijon mustard, whole grain
2 T honey
Directions
Saute onion, garlic, mushrooms and chicken. Let the chicken cook on both sides until it’s internal temperature reaches 165 degrees
Add dijon, honey and arugula. Season with salt and pepper.
Top with feta and enjoy.
