Chicken Gyro Salad
Serves 4-6
Ingredients:
4 chicken breasts (abt 2 lbs.) at Copicut
1 Tbs olive oil
Zest and juice of 1 lemon
2 garlic cloves, minced
1 tsp salt
1 tsp paprika
1 tsp oregano
Black pepper
Veggies;
lettuce,
cucumber,
peppers,
red onion
tomatoes
pitas
Tzatziki Sauce:
2 cups labneh (from Mahalab Bakery)
1 cucumber, peeled and seed, then grated
2 T lemon juice
1-2T chopped fresh dill
2 garlic cloves, minced
1 ½ tsp salt and ½ tsp pepper
Directions:
Add all ingredients, except the veggies and pita, together.
Marinate for about 20 minutes.
Grill the chicken or pan fry.
When cool, slice it up.
Slice all desired veggies and lay out on a platter.
Assembly:
Warm the pitas, and fill them with chicken, veggies and top with tzatziki sauce. Serve immediately.

For a vegetarian version: Use sliced tofu in place of chicken. After it marinates, bake in a 375 oven for about 25 minutes, flipping half-way through.
